Hyspa yep
Cut the salad in strips, dice tomatoes, green peppers into small cubes, chorizo into fine slices.
Drizzle olive oil & vinegar on tomatoes and peppers. Prepare your scrambled eggs and keep them warm if possible. Add a drizzle of olive oil, basil, salt and pepper
Stir the yep mix into water. Add a pinch of salt.
Heat a lightly oiled, non-stick frying pan. Pour a laddle of batter to and form a crepe (pancake).Cook for 1 to 2 minutes . It is not necessary to cook it both sides.
Flip the yep on a lightly oiled plate. Let it cool down for a minute or 2 before handling.
Fill with a bed of lettuce, diced tomatoes and green peppers. Then add the scrambled eggs, 5 slices of chorizo , salt and pepper.
Sprinkle with chopped chives.
